INGREDIENTS
1lb. Package of large Marativa Blue Shrimp
1 cup of Quinoa
2 cups of Water
1/2 cup of Cherry tomatoes
2 tbsp Basil (finely chopped)
1 tbsp Mint (finely chopped)
1 Garlic clove
1/2 Onion
1/2 Cucumber
1/2 Yellow Bell Pepper
1 Zucchini
1/2 Cup of Olive oil
1/4 Cup of Balsamic Vinagar
Salt and Pepper
Iced water
DIRECTIONS
1.Stir fry quinoa with a little olive oil, when the pot is very
hot add the water. Once it boils lower the flame,
cover and cook for 10 minutes.
2.Turn off the flame and let it sit for other 10 minutes.
3.Puff with a fork and cool it down.
4.Cut the cherry tomatoes in half and finely chop the rest
of the ingredients.
5.Sauté onions, garlic and zucchini. Cool down.
6.Poach the shrimps in boiling water for 3 minutes and
pass to a bowl with iced water to stop them from cooking.
Discard the water and reserve the shrimp.
7.Mix all the ingredients and season with olive oil, balsamic
vinegar, salt and pepper.
