Octopus tacos

For 4 people
Ingredients:

For the salsa:

  • 10 chiles de árbol deveined and with no seeds
  • 1/4 cup of roasted peanuts
  • 1/4 cup of roasted sesame seeds
  • 1 roasted tomato
  • 1 roasted garlic clove
  • 1/4 roasted onion
  • 1 cup of chicken stock

For the tacos:

  • 1 cooked octopus size 2-4
  • 8 corn tortillas
  • 1/4 cup of chopped pineaple
  • 1/4 cup of chopped onion
  • 2 tbsp of chopped cilantro
  • 1 spoon of lemon juice
  • 1 sliced lime

Instructions:

For the salsa:

- Roast the chiles and dip in the chicken stock
- Blend all the ingredients and season with salt and pepper

For the tacos:
- Cut the tentacles and sear in a cast iron pan with oil.
- Heat the tortillas on a pan and sear the lime.
- Mix the pineapple, onion, cilantro, lemon juice and season with salt and pepper.
- Serve one tentacle per taco and add both sauces on top of the octopus.
- Place the lime and some cilantro on top and enjoy.
