Ingredients:
- 2 lbs of peeled and deveined shrimp
- 8 tortillas
- 1/2 cup of grated cheese
- 1 tsp of garlic
- 2 tbsp of finely chopped onion
- 2 tbspof chipotle chile
- 1 tbsp of sour cream
- 1/2 cup of sliced purple cabbage
- 1 tbsp of purple onion finely chopped
- 1 avocado
- 2 tbsp of chopped cilantro
- 5 limes
Instructions:
- Bring a pan to medium heat, add a some oil and cook the onion and garlic. Sear the shrimp on both sides, bring the heat to the minimum and add the chipotle, cream and cook for 5 minutes..
- Place the tortillas in separate pan and add the grated cheese on top, wait until it melts and flip them around. Cook for about 3-5 minutes until a crust develops.
- Place the shrimp on the tortillas and add the cabbage, onion, avocado, cilantro and the lime.
