Shrimp tacos with chipotle and cheese crust

Ingredients:

  • 2 lbs of peeled and deveined shrimp 
  • 8 tortillas
  • 1/2 cup of grated cheese
  • 1 tsp of garlic
  • 2 tbsp of finely chopped onion 
  • 2 tbspof chipotle chile
  • 1 tbsp of sour cream 
  • 1/2 cup of  sliced purple cabbage 
  • 1 tbsp of purple onion finely chopped
  • 1 avocado
  • 2 tbsp of chopped cilantro 
  • 5 limes

Instructions:

  • Bring a pan to medium heat, add a some oil and cook the onion and garlic. Sear the shrimp on both sides, bring the heat to the minimum and add the chipotle, cream and cook for 5 minutes.. 
  • Place the tortillas in separate pan and add the grated cheese on top, wait until it melts and flip them around. Cook for about 3-5 minutes until a crust develops. 
  • Place the shrimp on the tortillas and add the cabbage, onion, avocado, cilantro and the lime.
